Royal Q Blog

Hi, I’m Steve and I’m the Pit Boss of the Royal Q Barbecue Team. I knocked this site together and I’ll be the one who updates this blog, assuming I have the time. We decided to put the blog together to share some of our experiences with the Q. I hope people who read it find it worthwhile and enjoy it.

I’ve been well crap on the whole website front recently. I’ve been snowed under at work and I’ve also had a wedding to plan along with two comps to do.

The good news is the work project is done, the wedding is sorted and we placed third in ribs and brisket at the BBBQS Southern Champs followed by a win in brisket at the national championships last week.

So I’m trying to catch up on the recipe section soon as well as keeping this blog up to date.

It was worth the overnight toil that’s for sure.

I had a few temperature holding issues after about 8 hours but a refuel sorted this out and we got back on track. The briskets took a whopping 17 hours and I thought they were going to end up drier than a pair of old boots but they didn’t.

Got to do some things better next time but I’ve got a yard stick to measure improvement against now and it was a pretty tasty yard stick

Good is not the word! I love black pudding and I love white pudding mixed with the sweetness of the chili jam. coat it all in sausage and bacon and it’s a dream come true! The whole fatty lasted about 10 minutes between three of us.

Idea number two is going to be a little more lard-tastic so stay tuned.

However it’s a hand-me-down from my in-laws that they were getting rid of because it was “too cold”.

I was skeptical about this until I got a couple of cornetto ice creams out on sunday while smoking some pork. When I bit into one it was like it had been in a 180 freezer, the ice cream was actually brittle. So Nes and I thought let’s smoke them!

Hickory chocolate ice cream isn’t quite as bad as you might think!
