We take Barbecue pretty seriously, so seriously in fact that we take part in BBQ competitions against some of the best BBQ’ers in Britain.
Championship BBQ is already a major phenomenon in the USA and it’s something that’s spread to the UK. We cook in the Pit Masters Series run by the British BBQ Society, this is based on the American KCBS competition style. We cook some cuts of meat many Brits would not typically associate with barbecue, whole pork shoulders, whole briskets, racks of pork spare ribs and chicken. We’re not talking about grilling over hot coals, our BBQ’s are set up to run at low temperatures to slow cook our meat. It’s more like using a low temperature wood burning oven to slowly cook and tenderise tough cuts of meat while flavouring them with a kiss of English hardwood smoke.
We’re really passionate about BBQ cookery, not just from a competition perspective, we want to help promote real quality BBQ in the UK and let people know that you can cook a bit more than bangers and burgers over charcoal. The last thing we want to do is sound like we’re preaching, we know that BBQ is about more than just the food, it’s about getting together with friends and family, eating, drinking and enjoying the experience together. But the way we see it, Britain is home to some great farms, producing some of the best meat in the world, so why shouldn’t we make the most of it?
